What is your favorite easy to make food experiment?
I do a broiled salmon on top of salad.
Costco frozen farm salmon, thawed. Season with garlic salt, pepper, and some olive oil in foil. Close it up and bake/broil at 450F for ~10min. Open it up and broil the top for 2min.
Drop that on top of salad (Costco $3.99 tub of spring greens). Top with some toasted pine nuts/sunflower seeds, dried cranberries, and balsamic dressing.

Pesto shrimp pasta
Boil water - toss noodles in
Thaw shrimp in a strainer by rinsing with cold water and then pressing with a paper towel to dry it out.
Once the noodles are done, strain while hot and spoon in pesto. Toss in the shrimp and toss it all together. You might have to heat it a bit to get the shrimp up to temp.
I did about 1/2lb of noodles, 4tbsp pesto, and roughly 20 (21-36 sized) shrimp in 15 minutes (including boiling water time!).
Rough cost was ~$13 (for double the above, and it serves ~6).

Those are both recipes I've tried before, pter. Good stuff!
Costco also has a really good seasoned salmon filet, individually frozen in oil and spices. I thaw them in their plastic in cold water for 15-45 minutes and then pop them in a hot toaster oven. They take about 10 minutes, depending on how thawed they are and your oven.

I can't even imagine $1 on food a day.
