You can have whatever maps you like...I think you have has 5 maps concurrently (I only keep 2). I have a map for daily driving and a map for 'more spritid' driving.
As far as UTEC vs. EcuTek....depends on if you are comfortable having a reflashed ECU. I wasn't so I went UTEC. As far as I know, though, with EcuTek, switching maps is not quite as easy as with a UTEC (with the switch). Best person for these questions would be someone like Mike @ Gruppe-S, who I know is a fan of EcuTek, but also knowledgeable about the UTEC (he tuned mine).

You can run multiple maps on the UTEC and switch between them easily if you have a map selector. ECUtek only has 1 map, but it has learning ability, with it, car gets faster over time and has knock learning abilities...
Utec has knock correction, but not permanent, unless you go in with a laptop and change the map.
I switched from UTEC to an Ecutek because I found my self constantly having to go into the UTEC and make changes because of weather/temp.
Mike tuned both my UTEC and now Ecutek and have gotten consistant power with both, but the ecutek is much smoother than the UTEC.
