My old job. We switched to using Denso more so we just started putting the best one's aside for this project. I still have maybe 7 more and a never ending supply for the time being.
Remember all those Denso flashlights I got, now you know why.
All the hardware and tools came from either our local Ace (Dale Hardware) or the now closed Orchard Supply store.
I got all stainless hardware for the project. DIRT CHEAP! because they needed the Newark Store cleared out fast.

FWIW You could've just gone over to Infamous MetalWorks in Santa Clara and had Joey fab you a custom one.
His Uncle Chris owns The Works Auto Body right across the street.

Brendan would this be your daily driver? If it is I would not run a cage because those are for track cars only where you got to wear a helmet so if you bump your head on the bar it would not kill you. On the street you have more chance getting hit when you don't have a helmet on your head to protect you when your head hits the bar which would kill you even at 35mph impact.
