European Jews are (usually) Ashkenazi or Sephardic. Ashkenazi Jews are the majority of the Jewish population especially here in the U.S. They have Eastern European roots, and they (typicall) spoke a Germanic language known as Yiddish. (oy vey, nosh, shlep etc.)
Sephardic Jews are the smaller group and hail from Spain. They speak a Latin language known as Ladino, and typically eat cous-cous instead of bagels, and are more Mediterranean in their culture. Most Jews in France today are Sephardic.
Then there are Ethiopian Jews, South Asian Jews etc. Ultimately, all Sephardim and Askinazim have very different cultures, and it would make sense that in a Jewish dating site to specify.
