woudn't an 18" rim make a stiffer and smaller sidewall and help cornering?

18" would also add more rotational mass as well. Stiffer/thinner sidewall=harsher side and more chance to possibly bend a wheel.

Small sidewall doesn't always mean better cornering. It usually means better turn in responce, but less "bite" as well. Go to a local auto-x and see what size rims people are running. I'll bet you $20 you'll see more 16"ers than anything. The other downside to larger rims is unsprung weight (weight not supported by the supension). Greater unspring weight increase ride harshness and cowel shake and decreases traction on rough roads.
