It's not the puss touching YOU it's the fact that you are opening up the skin of someone - infection is almost certain without the proper precautions. The hands, next to the mouth, contain the most bacteria on the human body - so it's not about touching the puss (though, it's gross), it getting what is on your hands in your patient.
I was thinking the samething, I wonder if they properly disinfected that blade. They weren't even wearing gloves.. but then again you can see all the beer sitting there haha, wonder what influenced this surgery.
