Cold Steel sells a really nice set of Kitchen Knives for ~$100
I bought a set of them for my wife's parents as a gift a few years ago. My mother in law almost took her thumb off slicing a potato. She was used to their old knives which aren't all that sharp... the Cold Steel just sailed through the Potato and on into her thumb. Insanely sharp blades

Okay, let me see what I can do about waking this thread up a little bit. You want blades? You got em.



1. Seki Cut-102 Encounter 3.99 inch "drop-point" D2 tool steel blade
with Grey hard anodized aluminum handle, design by Bob Lum. This is my letter
opener that sits on my desk.

2. Benchmade-550SHG Griptillian 3.45 inch 154CM steel "modified
sheepsfoot" blade with a Valox handle, 420J stainless steel liners, and
AXIS-lock, design by Mel Pardue. This is my heavy duty every day carry
which sees the most action and takes all the abuse.

3. Benchmade-942SBT2custom (its a custom assembly from 3 separate
knives) Osborne 3.40 inch S30V powder-made steel "modified reverse
tonto" Xylan coated blade (its like teflon but with saltwater and scratch
resistance built in) with an anodized 6061-T6 aluminum handle, 410 stainless
steel liners, PINK color anodized titanium spine, and AXIS-lock, design by Mel
Pardue. This is my "pretty" every day carry which gets to maintain it's razor
edge and sees little to no abuse.

4. Leatherman Skeletool CX 154CM steel. Has tools on it. And some
carbon fiber. Every day carry.

5. Benchmade-30200 Houdini-Pro 9Cr13CoMoV steel (denotes the
Chromium, Cobalt, Molybdenum, and Vanadium that are added to the steel to
give it various hardness, shininess, and edge-maintaining properties). It has a
seatbelt cutter, spring action glass breaker, and LED light build into it. I carry
this whenever I work an EMT shift, comes in handy when you need to cut
seatbelts or clothes off in a hurry.

6. Swiss+Tech Utili-key 420 stainless steel key look-alike that is
actually a multi-tool with a serrated and plain edge blade on it. Every day
carry on my keychain.

7. Bayonet. Any questions? This stays in my trunk.

8. Hibben Knives UC0866 Pro Thrower Axe More 420J stainless steel.
Stays in my trunk.

9. Estwing chopping hatchet It's made of steel and it chops wood.

10. $10 machete that I got from Puerto Rico. Stone-sharpened to my liking.

11. $10 butchering and slicing knife. I use this when I need to cut a big piece
of meat with one neat slice. Sharpened to a ridiculously sharp edge, only sees
use when I'm cutting up a whole filet mignon tenderloin.

12. Shun Classic Series 8 inch chef's knife. Made from VG-10 stainless steel
clad with 32 layers of high-carbon stainless steel, black PakkaWood D-shaped
handle.

13. Shun Classic Series 3.5 inch paring knife. Made from VG-10 stainless steel
clad with 32 layers of high-carbon stainless steel, black PakkaWood D-shaped
handle.

 

I had that same Kershaw Ken Onion and couldn't have been happier with it for EDC and I'd not carried a knife for years. Unfortunately, I had it in my pocket and forgot about it when I went to the airport...

I picked up my Shun at Sur la Table. Amazon usually has some good deals on knives, though. Try them out at Sur la table and buy them online.
