the welds on this picture I consider very top notch, it doesn't have to look this pretty, but of course it has to look clean

just a stainless steel is fine

I used these header modeling kit for my proof of concept design, I need someone to transfer this to stainless steel

There are only 2 places in the bay area that could do this well (I know of).
https://www.sandersonheaders.com/ in South SF
Pacific Fabrication in Morgan Hill. Pacific Fab does not advertise custom headers but I've seen their work on Mary Pozzi's Camaro.

I gotta be honest, I don't see how a 180 degree header is fitting into a C5/C6 chassis with an intact firewall. LG Motorsports is pretty much the go-to for true racecar stuff on those cars and they don't bother with 180deg

The only ones I have seen that worked were converted to dry sump, then the crossover pipes ran where the sump was. Pretty cool, but soooo much work.

n00b curiosity question since I never dealt with Corvette's...what's the benefit, purpose and/or challenge with 180* headers?

The primary tubes cross over before they get to this collectors. It has to do with balancing exhaust pulses on an V8
In a perfect world all V8 headers would be this design, but they are a nightmare to fit into a chassis
This is a Chevy V8 with conventional headers

This is an example in a 180 deg header in a Dragster
