Interior is different, sound system is different, some suspenson tweaks, different wheels, couple other little things.
It really depends on what you prefer... and of course the 04 might be cheaper as well.
You should sit in and drive both and find out which one you like more. Good luck, either one you will be happy with!

i have an 04. it's sweet. i'm mad that the 05s have suspension tweaks though. damn them...... screw it, i'm getting coils anyways.
i don't like the new scooby line-up as much. their attempt at integrating buttons on the console was weak. i don't like it. i also hate the new steering wheel. once it's "subaru", it doesn't have an aftermarket feel anymore. haha. i like "momo".

buttons on console? i like the momo steering wheel also..i drove my uncle's friend's 03 wagon.. it was nice! i wonder how he was able to get leather seats.

the 04s have really wide seats. They are definately not made for a skinny a$$ like me. i also hate the seats. Whenever i'm going through twisties, i get thrown around. Sucks.

Yeah what's up with the suspension tweaks...cause they made some from 03 to 04 as well.
I like my seats..but then again I'm not skinny.
And for leather you can do aftermarket or get it from the dealership. There is a wagon and santa cruz subaru with the leather option right now. Looks really nice. And is very comfortable.

guess you don't plan on driving too many twisties or doing track days? the reason wrx's don't have a leather seat option is because most people drive their cars aggressively and would slide all over the place in leather seats. racing seats always at a minimum have cloth inserts to hold you in place... but if it's just gonna be a grocery getter for you, leather will work fine!
