I dont know.. what the purpose of your trip is.. If i had a chance to visit Hong Kong and Tokyo, Id want to take in the sights...
Anything you cant buy online.
Car parts? blah.. you can find ALMOST anything youll see there online.. and its not like you are going to bring it back as carry on luggage

I don't know tokyo at all(only been there twice), but I've been to HK quite a few times. Kowloon night market is a must see , Temple street is a good night market too. These are night markets, even though there's some movement during the afternoon, they are hopping after dusk. Be prepared though, most of the real hot chicas are a bit on the snooty side of things(compared to the other parts of asia I've been to). The peak(victoria peak) is a pretty nice scenic spot, really good view. The wisdom path is a real neat walk, kind of awe inspiring, and you get a real sense of peace. If you're up for scenic trips, a ferry ride is always a bonus. The Ocean park is neat, good place to spend the day entertaining a girl, it's an asian marine world. And if you go to Ocean Park you MUST check out Aberdeen Harbour. It's a trip to see all of the folks living on their little boats, then turn your head and see a community of sky scrapers right behind you. There are quite a few colonial things to see if you're up to it, not my cup of tea though chap
There is so much to see and do in HK I'd really plot out an itinerary and don't be afraid to use the bus system there, it works well and I'm a big old white guy usually travelling by myself and have yet to have trouble.

For Tokyo: Autobacs in Minato-ku is worth the trip, plus it's in Tokyo proper for God's sake so just go dammit! Other highlights: Westside Tokyo is fun: Shinjuku and Shibuya have great shopping and clubs, but from what I've heard, Harajuku these days is kinda slow. Alot of the small, unique boutiques and cafes have closed, and lotsa the cosplay kids don't hang out in Yoyogi Park anymore. Harajuku is fun if you're in the mood for, uh, "night activities" haha. Same with Roppongi (lotsa foreigners there though so it's not so "Japanese" there). Roppongi Hills though is really nice with top class shops and dining, and lotsa cute girls haha. Asakusa Kanon Temple is a must-see, make sure you take a pic of yourself in front of Kaminari-mon (Thunder Gate), and walk around the street market/shops there too! Go out to Odaiba and the Tokyo Bay Area, it's a nice view and there's a nice shopping area called Decks that has a HUGE arcade called the Sega Joypolis (they even have indoor snowboarding there!). Also check out the Fuji TV building there too, it has really unique architecture! Ginza is a must, it's chock full of famous shops and a huge toystore (like, 6 stories or so). If you want electronics, I say skip Akihabara and go to a branch of Sakuraya instead. Prices are competitive, plus you're guaranteed brand new unopened electronics there. If you have time, head out to Yokohama, check out Chinatown, ride the HUGE ferris wheel for a nice view of the Tokyo Bay Area. Speaking of views, pay a visit to Tokyo Tower too! Also the Tokyo Big Sight in Roppongi Hills (?) too!

Now for HK: illusion is right on all counts, and I'll add a few: Mong Kok has lots of unique local shopping and is where the urban trend center of HK. It's where refurbished action figures where born! The stores are roughly arranged by genre by the square block, so all the RC shops are one or two square blocks, sporting good on another sq. block, car parts on another, etc. Plus there are lots of shopping centers that house independent stores and boutiques that are worth checking out! In Tsim Sha Tsui, there's the biggest shopping center in Hong Kong, Harbor Plaza, that's also the ferry station. A good mix of high end shops and independent boutiques! If you like horse racing, check out the races in Happy Valley. One of the finest tracks I've ever been too. If you have time, visit the outer islands like Lantau and Cheung Chau, it's a nice quiet lifestyle that reflects HK of the last century, plus you'll taste some of the freshest seafood ever on Cheung Chau! On Lantau, visit the largest outdoor Buddha in the world and have some sweets at the temple at its foot. If you have time, visit Macau and eat at Fernando's. EXCELLENT Portugese/Chinese food that defines the taste of Macau. Also, there are many nice casinos on Macau and lots of fancy Portugese buildings. Make sure you visit the facade of the cathedral too! (can't remember the Saint's name though d'oh!).
