So it was the polishing responsible for the improvement, not the opti-coat.

Yes, the polishing cleans it up. Opti Coat acts like a hard coat for the soft paint.

Yup and it looks like they aren't transported the same as the older subys.
So far all the ones that I have worked on all have water spots

Which Griot's orbital? Electric or air?

I may want to try this stuff on my GF which has slightly oxidized paint. It looked great after a polish and wax, but the wax doesn't last as well on the older paint and I don't tend to wax that one as much. Something like this might do the trick...

Electric Griot's. What wax are you using?
Carnauba wax only lasts a month. Synthetic wax will last 3-6mos.
An inexpensive wax that I use and lasts long is Collinite 845

Griot's Best of show on the WRX and it lasts pretty well, but used Meguiar's Hi-Tech Yellow on the GF lasts no more than 2 months. Not too fond of synthetics because I've tried a few and was never impressed with any. Plus, I love the deep shine of carnauba, but not the applying, removing and frequent re-application.

I agree with on the the carnauba. Although, not all waxes are the same regardless if they are synthetic or not.
Meguiar's Hi-Tech yellow is not one that I would use or recommend.
What color are the cars?

The GF is dark green. WRX is PSM. I started using Hi-Tech yellow years ago because I like that it doesn't dust too bad and doesn't leave a lot of residue, but it just doesn't last.
