Low coolant temp

Hey guys I need some up diagnosing my car.

I have a '05 wrx that warms up fine. But once I get up to 70-80k my coolant gauge slowly drops.
I pulled a code with my A/P p0281 if I recall correctly which said coolant t-stat running low temp.
So changing out my t stat is what I would do first. Any suggestions on what t stat to get?? related issues?? Let me know what you guys think.

Thanks in advance

or just a bad gauge but check and confirm the coolant level throughout the day and week...hope you figure it out.

i had the same issue a few months back. temp was fine then looked down and it said I was running cold after hard driving( never got a code). I had no leaks at all. turned out the thermostat had failed in the open position. I replaced it and the issue was corrected.
