Do you have a boost gauge? If not better get one ASAP as that is the only way to safely adjust an aftermarket boost controller. You can't just crank it up "a few turns" and take off. Chances are you are overboosting and the jerking is the ECU cutting fuel. Do you get a CEL when this happens?
To prevent any (or further) damage to your engine take it easy until you know how much boost you are actually running.

Incorrect. it's not in bar, it's MPa. The conversion is different. Your overboosting, turn it down.

.05 = 7.25

.06 = 8.70

.07 = 10.15

.08 = 11.60

.09 = 13.05

.10 = 14.50

.11 = 15.95

.12 = 17.40

The boost gauge doesn't automatically come with the car, it is an option. Apparently your car had one.
Yes that is way too much boost on the stock turbo and engine management. Keep it under 16 psi, 15 is probably the most you want to go.
