How hard are front/rear strut bars to install on 00 impreza 2.5rs'?

Strut bars? EASY

Front, very easy. Rear... can be a little more difficult. But Front... you can do in like 10 minutes max.

It will be easy and safe if you always wear hand and eye protection, and follow proper safety precautions, when working with power tools.
